Cadillac Côtes de Bordeaux Château Baracan is a very old vineyard located within the municipal district of Capian and purchased by the Gonfrier family in 1989. Conscience of the property's exceptional terroir, the new owners have entirely reworked the vineyard (drainage, increased density and new grape varieties). Sustainable farming methods are applied to the entire vineyard, which enjoys HVE3 (“High Environmental Value”) certification.Vinification : Destemming, crushing and vatting. Cold pre-fermentation maceration during 72 hours, to delicately extract colour and fruitiness. Fermentation and maceration in stainless-steel, temperature-controlled tanks during 20 days on average.
