Vineyard surface area : 5 hectares
Terroir : Clayey-gravelly slopes
Grape varieties : 90% Sémillon, 10% Sauvignon Blanc
Average vine age : 35 years
Viticulture : Traditional Bordeaux-style vine training, with two canes and a flat arch. Controlled grassing-down of the vine rows and mechanical working of the soil, to improve the soils’ vitality and biodiversity. Manual “green harvesting”, for a homogeneous distribution and proper aeration of the grape bunches.
Sustainable farming methods are applied to the entire vineyard, which has HVE3 (“High Environmental Value”) certification.
Vinification : The grapes are harvested at their maximum aromatic potential. Maceration of the berries under inert gas to capture the best of the grape skins, then delicate and fragmented pressing. Clarification of the must, then entonnage in 225L and 300L French barrels. Regular stirring of the lees during the alcoholic fermentation in barrels.
Ageing : On the lees in French oak barrels for 8 months with interval stirring.
With a brilliant hue and golden reflections, Odyssea, Bordeaux Blanc reveals floral notes, candied citrus fruits, pineapple, and hints of almonds. Finely balanced and complex, the candid and suave Palate underlines a beautiful minerality.
Ideal to taste with grilled fish, white meat or goat cheese.
